MIX red is a blend of a selection of vineyards from the Bierzo and the Ribeiro regions. All vineyards are plan- ted with local varieties that best express the identity of each region. Mix of “sabrego” soils, sandy soils with decomposed granite and alluvial soils. Vinification: Harvest by hand and in boxes. Selection in vineyard bunch by bunch. Fermentation in tanks of 1000 L using wild yeasts. Blend of all vineyards and ma- lolactic fermentation together in old barrels. Aging: Twelve months in old French oak barrels.
