Brewed with 100% Yamadanishiki rice from Hyogo that is polished down to 50%. This Junmai Daiginjo has mild Ginjo aromas like honeydew and green apple. Beautifully balanced acidity and umami that pairs well with sushi, such as uni, eel, or redfish.
