César Márquez
César Márquez, a young winemaker from the Bierzo region, has established a notable presence in winemaking through his family's deep roots and personal apprenticeship with his uncle Raul Pérez. Starting his own project in 2015, Márquez focuses on exploring a Burgundy-inspired classification system in Bierzo. His winemaking approach emphasizes the expression of grape origins, primarily using over 100-year-old Mencía and Garnacha Tintorera grapes. The wines undergo a similar process, including partial destemming, fermentation in open barriques, long post-fermentation macerations, and 12 months in old barrels. This process aims to highlight the unique characteristics of each vineyard's soil, altitude, and exposure, resulting in fresh, expressive Mencías.
